Rouge et Noir Reduced Fat Pizza
This dish presents well as an appetizer with high flavor, but lower fat. As opposed to typical pizzas that use more than a pound of mozzarella cheese without adding much flavor, this low fat alternative only uses 3oz.of tangy full flavored Schloss!
½ - 6oz. Schloss or 3oz. of Rouge et Noir Schlosskranz
1 - Medium size 10in. pizza dough crust (10oz. plain pizza dough, or pre-formed par baked)
1 - Whole Roma tomato
3 - Sprigs of fresh rosemary
1 -Tablespoon olive oil
1 - Teaspoon crushed red pepper
1 - Clove fresh garlic
Prepare pizza dough into a thin 10 inch round and let sit for 30 minutes at room temperature. While waiting for pizza dough to settle, preheat oven to 425°F. Slice Roma tomato to 1/16 “ (thin) slices and set aside. Crumble the Schloss and keep chilled at 40°F in refrigerator.
After placing dough on a pizza pan or cookie sheet, prepare pizza toppings as follows:
Rub the olive oil on dough surface. Place tomato slices on dough, distributing evenly.
Place Schloss crumbles evenly over dough and tomato slices. Hand sprinkle leaves from rosemary sprigs.
Hand sprinkle crushed red pepper preparation.
Chop garlic and distribute evenly. Bake at 425°F for 15-20 minutes until crust browns.
Finished weight is approximately 1lb. or less (compared to normal 10 inch pizza weighing more than 2lbs.). Serves 2-4 people as a dinner course. Add your own favorite ingredients like sliced olives or artichoke hearts!
