Brie and Olive Sandwich

JIMTOWN BRIE & CHOPPED OLIVE SALAD SANDWICHES

Makes 3 large sandwiches, 9 “halves”

1 loaf baguette-style bread

About 1 pound ripe, triple crème Marin French Cheese Brie

7 oz. Jimtown Chopped Olive Spread

About 2 cups mixed baby salad greens (mesclun) optional

1. With a serrated knife, split the baguette horizontally. Spread the Brie on the top side of  the baguette dividing it and using it all. Spread the Chopped Olive Spread on the other, bottom, side, dividing it evenly, and using it all.   Place the greens over the Chopped Olive and close up the loaf. With a serrated knife, cut the loaf into thirds then cut each section into two pieces

2. Serve immediately or wrap tightly in waxed paper or parchment. These sandwiches taste even better an hour or two later.
