Schloss Apple & Carrot Salad

Schloss - Apple & Carrot Salad

Serving Size 6

 

Salad

 

  • 2 Fuji apples
  • 1 large carrot
  • 1 6oz Schloss (castle) cheese

Dressing

 

  • 1T sugar
  • 1T flour
  • ½ tsp salt
  • ½ tsp dry mustard
  • Dash ground red pepper or Spanish paprika
  • ¾ c milk
  • 2 slightly beaten egg yolks
  • ½ c white vinegar

In a saucepan combine sugar, flour, salt,

mustard, and red pepper.

Stir in milk and egg yolks.

Cook and stir over medium heat until thick and bubbly.

Cook for 1 minute more. Stir in vinegar until smooth.

Let cool. (Makes 1 cup.)

 

Cut Schloss into 1/2in cubes.

Julienne apples and carrot and mix with cheese.

Place in bowls and top with dressing.
