
Fried Camembert with Marinated Fruit and Truffle Honey
Ingredients:
2 Rounds Rouge et Noir Camembert
4 oz. Panko bread crumbs (finely ground)
4 oz. flour-all purpose
3 whole eggs
1 oz. milk or cream
Truffle Honey
Grand Marnier (optional apple juice)
5 Fresh strawberries
2 tbs. blueberries
2 tbs. raspberries
Honeycomb (optional garnish)
4 sprigs mint
Salt and pepper to taste/oil to fry (use trans fat free oil)
Directions:
Cut the Camembert into eight pieces. Whisk the eggs with milk or cream (just small amount). Prepare a breading station.
1.) Flour
2.) Eggwash
3.) Bread crumbs
Place back into esswash and again into bread crumbles. Place into the freezer to chill the cheese very well. Pre-heat the oil to 375 degrees and fry the cheese for 3-5 minutes until golden brown. Serve over the marinated fruit and drizzle with truffle honey. Garnish with mint and honeycomb (optional).
Wash all berries. Cut the strawberries into small pieces. Mix with honey and grand marnier or apple juice. Chill until needed.
