Ham, Brie & Apple Quesadillas
Ham, Brie and Apple Quesadillas
•12 small flour tortillas
•16-ounces smoked ham, thinly sliced
•2 Golden Delicious apples, cored and thinly sliced
•16-ounces Brie cheese, sliced
•3/4 cup apple butter
•1/3 cup sour cream
•1 chipotle in adobo pepper, finely chopped
Preheat oven, or convection oven, and bake at 400 degrees F.
Place three flour tortillas in a single layer on two baking sheets.
Take a handful of smoked ham and sprinkle it evenly on each tortilla; scatter several apple slices on top of the ham and then evenly place brie slices over the apple slices. Top each quesadilla with another tortilla.
Bake for 10 minutes until the brie has melted and the tortillas are slightly browned. Remove from oven and cut the tortillas with a pizza cutter or knife into 8 wedges each.
Combine apple butter, sour cream, and chipotle pepper in a small bowl. Serve with quesadillas.
