Blue Crab Gratin with Brie

Blue Crab Gratin with Brie

Ingredients

½ cup of heavy cream           
2 oz. jumbo lump Louisiana blue crab
2 oz. Brie
¼ cup grated Reggiano Parmesan
1/8 cup of panko bread crumbs
Salt and pepper to taste
Snipped chives

Cooking Directions

Preheat broiler to high. In a small saucepan reduce cream by half over medium high heat. Add crab and simmer until warmed through. Gently fold in Brie and chives. Taste for salt and pepper, adjust seasoning. Place in an eight-ounce casserole dish and top with one layer of Parmesan, then one layer of panko, then one more layer of Parmesan. Place in broiler for 25-30 seconds until golden brown. Serve with more chives and warm bread.
