et Noir‘s tantalizing combination of our delicious goat s’ milk Brie and
traditional Roquefort culture that’s mixed right in the milk. The cheese
is then pierced throughout in the time-honored method for developing delicate blue
viens.
The Blue mold adds a
slight piquant accent to the sweet tasting goat’s milk. This delectable cheese
pairs well with a Sonoma Valley Pinot Noir or an herbaceous Merlo, Cabernet Sauvignon
and lively Rhone wines.
